No simple syrup? Use 2 teaspoons superfine sugar, or dissolve regular granulated sugar in a small amount of warm water.
2–3 oz club soda
Ice (cubed or crushed)
Lime wheel for garnish
Directions
Place the mint leaves and simple syrup into the bottom of a cocktail shaker or a tall highball glass.
Gently muddle the mint using a muddler or the handle of a wooden spoon. Press just enough to release the fragrant oils without shredding the leaves, which can make the drink bitter.
Add the fresh lime juice and white rum.
Fill the shaker with ice and shake until well chilled. If you're building the drink directly in the glass, simply add ice and stir thoroughly.
Strain into a glass filled with fresh ice.
Top with club soda and stir gently.
Garnish with a fresh mint sprig and a lime wheel. For extra aroma, lightly clap the mint sprig between your palms before placing it in the glass.
