CLASSIC NEW ENGLAND Fried Whole-Belly Clams

Ingredients

• 1½ lbs whole-belly steamer clams

• 1 cup evaporated milk (or buttermilk)

• 1 cup corn flour

• 1 cup cake flour

• 1 tsp salt

• ½ tsp black pepper

• ¼ tsp cayenne pepper

• Peanut or canola oil for frying

For Serving

Lemon wedges

Tartar sauce

Directions

1️⃣ Heat the Oil

Heat 3 inches of oil to 375°F.

2️⃣ Prepare the Coating

Combine:

• Corn flour

• Cake flour

• Salt

• Pepper

• Cayenne

Place evaporated milk in a second bowl.

3️⃣ Coat the Clams

Dip clams into evaporated milk.

Lightly dredge in the seasoned flour mixture.

4️⃣ Fry

Cook in small batches for 60–90 seconds, just until golden brown and crisp.

5️⃣ Serve

Drain briefly on paper towels.

Sprinkle with kosher salt.

Serve immediately with fresh lemon wedges and tartar sauce.
