Grandma Jackie's Blueberry Lemon Crumble Cake
National Blueberry Day
Celebrate July 8 with America's Favorite Little Blue Superfruit
There's something special about blueberries. Whether sprinkled over pancakes, folded into muffins, baked into pies, or enjoyed fresh by the handful, these tiny berries have become one of North America's most beloved summertime treats.
Every July 8, we celebrate National Blueberry Day, recognizing not only their incredible flavor but also the hardworking farmers who cultivate millions of pounds of blueberries each year. Native to North America, blueberries have been enjoyed for centuries and remain one of the most nutritious fruits you can add to your table.
To celebrate the occasion, we're sharing one of our favorite summertime desserts—Grandma Jackie's Blueberry Lemon Crumble Cake—along with a few travel ideas for anyone looking to explore some of America's beautiful blueberry-growing regions.
Grandma Jackie's Blueberry Lemon Crumble Cake
Moist, buttery cake bursting with juicy blueberries, topped with a sweet cinnamon crumble and finished with a bright lemon glaze. It's perfect for brunch, afternoon coffee, family gatherings, or dessert on the porch after a summer cookout.
Prep Time
20 minutes
Bake Time
40–45 minutes
Servings
8–10
Ingredients
Cake Batter
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup unsalted butter, softened
¾ cup granulated sugar
½ cup whole milk
Zest of one lemon
2 cups fresh blueberries
Crumble Topping
½ cup brown sugar
½ cup all-purpose flour
½ teaspoon ground cinnamon
½ cup cold unsalted butter, cubed
Optional Lemon Glaze
1 cup powdered sugar
2–3 tablespoons fresh lemon juice
½ teaspoon vanilla extract (optional)
Whisk together until smooth and drizzle over the cooled cake.
Directions
Step 1
Preheat your oven to 350°F. Grease a 9-inch round or square baking pan.
Step 2
In a medium bowl, whisk together:
Flour
Baking powder
Salt
Set aside.
Step 3
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Stir in the milk and fresh lemon zest.
Step 4
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Gently fold in the blueberries using a rubber spatula to avoid crushing them.
Step 5
Prepare the crumble topping by combining the brown sugar, flour, cinnamon, and cold butter. Cut the butter into the mixture using a pastry cutter or fork until coarse crumbs form.
Sprinkle evenly over the cake batter.
Step 6
Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool slightly before drizzling with the optional lemon glaze.
Slice and enjoy!
Grandma Jackie's Baking Tips
Toss Your Blueberries with Flour
Coating fresh or frozen blueberries with a tablespoon of flour before folding them into the batter helps prevent them from sinking to the bottom during baking.
Don't Overmix
Once the flour is added, mix only until combined. Overmixing can make cakes dense instead of light and tender.
Fresh or Frozen?
Fresh blueberries are wonderful during the summer months, but frozen blueberries work beautifully year-round. There's no need to thaw them first—just fold them into the batter while still frozen.
Add Extra Lemon
Love citrus? Add an extra teaspoon of lemon zest or a splash of fresh lemon juice to brighten the flavor even more.
Delicious Variations
One of the best things about this recipe is how easily you can customize it.
Try adding:
Chopped pecans or walnuts for crunch
White chocolate chips for extra sweetness
Fresh raspberries or blackberries
A streusel topping with rolled oats
Cream cheese frosting instead of lemon glaze
For a brunch-worthy treat, serve warm with a dollop of whipped cream or a spoonful of vanilla Greek yogurt.
Serving Suggestions
This cake is incredibly versatile and pairs well with almost any summer occasion.
Serve it:
With fresh coffee for breakfast
Alongside iced tea on the patio
Warm with a scoop of vanilla ice cream
As part of a holiday brunch buffet
At picnics, potlucks, and family reunions
It also freezes well, making it easy to prepare ahead for special gatherings.
